Located in the heart of Trastevere, Rome’s most charming and historic district, Cantina Fabullus is an extraordinary underground cellar with over two millennia of history. Set beneath an 18th-century building, the space was meticulously restored from a 1st-century AD Roman cistern and elegantly furnished with antique pieces that reflect its timeless charm.
The atmosphere is intimate and evocative, offering a multisensory journey through Italy’s rich culinary heritage. Expert sommeliers and culinary professionals guide guests through carefully curated tastings of fine wines and artisanal delicacies, selected for their authenticity, origin, and connection to tradition.
The wines and food products featured at Cantina Fabullus mainly come from small producers recognized by the Slow Food Presidia. These artisans preserve centuries-old production methods and are committed to biodiversity, environmental sustainability, and cultural heritage. The selection highlights certified DOP and IGP products, each representing a distinct Italian region and its gastronomic identity.
Menus are inspired by the seasons, reflecting the natural rhythm of the land, and showcase exceptional products such as Gorgonzola DOP, Taggiasca olives, Prosciutto di Parma DOP, Parmigiano Reggiano, Mortadella Bologna IGP, Guanciale di Amatrice, Mozzarella di Bufala Campana DOP, Pecorino di Moliterno IGP, and many more.
